As summer gently fades, so does the season of freshwater clams along Cambodia's majestic Mekong River. These humble clams, abundant and affordable, are more than just a popular snack; they are a cherished part of Cambodian life, enjoyed by young and old alike, often seasoned with a medley of spices that awaken the senses.

Growing up in the Philippines, I recall similar clams being prepared, especially for new mothers. It was believed that combining these clams with malunggay leaves could boost milk production. When I gave birth to our son, David, my mother lovingly prepared this soup daily (tinolang halaan widely called), hoping to help me nourish him. Despite her efforts, my milk supply remained modest. Yet, the memory of her care and the warm, comforting soup remains etched in my heart.

My husband, Vandy, shares fond memories of his childhood in Kampong Cham, where the Mekong River was a playground and pantry. He and his siblings would catch clams and fish, bringing them home for immediate cooking. These simple, hearty meals were a staple, reflecting the resourcefulness and closeness of his family.

Kampong Cham even celebrates these clams during the Khmer New Year, once featuring a festival highlight with three tonnes of clams. Though we missed the event, our family time was enriched by Kunthy, my sister-in-law, who prepared some for us, keeping the tradition alive.

At the dormitory where we serve, the students have developed a taste for spicy stir-fried clams, known locally as "cha leah." This dish, simple yet flavorful, has become a communal favorite, bringing people together over shared meals and stories.

4 Easy Steps Cambodian Stir-Fried Clams (Cha Leah):

Inspired by the flavors of Cambodia, here's a straightforward recipe for cha leah:

Ingredients:

  • 1 kg clams (cleaned and washed)

  • 2 tbsp oil (we used lard at home)

  • 8 garlic minced

  • 6 chillies, sliced

  • 4cm piece of chopped ginger

  • 100ml water

  • 1/2 tsp chicken powder or MSG

  • 2 tsp oyster sauce

  • 1/2 tsp salt

  • 1/2 tsp sugar

  • 1 spring onion, sliced

  • 1 bunch coriander, chopped

Instructions:

  1. Heat oil in a pan and sauté garlic, chillies, and ginger until fragrant.

  2. Add water, bouillon powder, oyster sauce, salt, and sugar. Let it simmer briefly.

  3. Add clams, cover, and cook for 3-5 minutes until they open.

  4. Turn off heat, stir in spring onion and coriander. Serve hot.
